'Stir Fry' is to prepare a dish in a jiffy. It just needs a bit of saute and less oil and is full of vitamins, as the cooking procedure is cut down, retaining the essential nutrients. 'Stir Fry' means to retain the texture, i.e the crunchiness. The less you cook the veggies, the more nutrients you get from it. Here is a quick 'Stir Fry' dish which has power-packed protein in the form of Cottage Cheese (Paneer), Carrot (a rich source of Beta-Carotene) and Capsicum (a rich source of Vitamin A, Vitamin C and Protein).



INGREDIENTS:

Carrots - 2
Capsicum - 1 Large
Cottage Cheese - 200 gms

(For Marination:)

Honey - 3tblspn
Tomato Ketchup- 2 tblspn
Chilly Sauce - 2 tblspn
Olive Oil - 2 tblspn
Oregano- 1/2 tsp
Chilly Flakes - 1/2 tsp
Black Pepper - 1/2 tsp
Salt - to taste

(For Saute:)

Olive oil - 1/2 tspn
Chopped Garlic - 1/2 tsp


METHOD:

  • Cut Roundels from the Carrots

  • Dice the Capsicum (Large sized)

  • Cube the Cottage Cheese

  • Mix everything given under the heading "marination"

  • Marinate the veggies and Cottage Cheese with the prepared mix.

  • Keep it aside for 30 mins.

  • Heat olive oil in a fry pan

  • Add Chopped Garlic, saute till browned

  • Add the veggies and Cottage Cheese with the marination.

  • Stir fry till well coated and veggies are slightly cooked.

  • Serve Hot.

Hey Manjusha, Can you do an informational post on cake icings? Just the icings I mean, not the cake. Like how to make the icing, what if one wants a particular color icing, how to apply it without making a mess etc. Kind of like a beginners level post.

Actually I'm going to pester u for this information anyway, so I figured if you were going to type it all, then u might as well make a post of it! :D I have something in mind for my birthday in Jan. But have never made an 'icing-waala' cake before. :p

Hi Kaddu, for icing the cake u can follow the steps as given in Hannah Montana cake and it's just an art. One gets this with practice. For butter icing one has to use cooking butter and icing sugar and beat well, add essence or color of ur choice to get the desired color or flavour. Second way is to beat egg whites with icing sugar on ice cubes which requires a lot of skill. Hope u shall be able to do the icing for your b'day cake and yes u can also look for ready made frosting by Pilsbury or imported ones if u want to stay away from all this fuss. Hope this helps!! Cooking butter? What's that? Is it different from Amul Butter? I think the Pilsbury idea sounds like something I might be able to do... if only I can find that stuff here! I want to make a round chocolate cake with vanilla icing, but colored orange, so I can shape it like a pumpkin. Maybe a bit of chocolate icing too for the eyes & mouth. So basically, I'll 3 colors I think. Does it spread easily?

Cooking butter is differnet we get it here in stores am not sure about other cities, it's actually unsalted butter. Pilsbury if used in room temperature spreads very easily and also the cooking butter icing too spreads easily. u can look for google search for pumpkin cakes it would be in the halloween coloumns
